The controls regulate both its agitator and steam. The agitator has electronic, variable speed controls and operates at any RPM between minimum and maximum. The steam pressure operates dependably at any steam pressure of 50 PSIG. The steam supply is injected directly into the jacket through the trunnion and the condensate is removed through a tube contained in the jacket and connected to the opposite trunnion. There are no exposed steam piping or obstructions on the kettle body.
